what you need
  • Chicken or pork, cut into small bite size pieces
  • Olive oil
  • Spring onion, chopped
  • Green or red or yellow bell pepper, chopped
  • Zucchini, quartered and sliced
  • Yellow squash, quartered and sliced
  • Mushrooms, sliced
  • Tomatoes, chopped
  • Eggplant, chopped (optional)
  • A dressing or marinade (like a balsamic vinaigrette)
  • A squirt of Dijon or other mustard
  • A dash of white wine (optional)
  • Salt & pepper
make it
Start off sauteing the chicken first in olive oil.

Then saute the onion and peppers first and then add the veggies and chicken. If it needs more liquid, add a little water or chicken broth.
The great thing is you can not do it wrong and you can do it a million different ways. We serve it over a brown basmati rice or our latest favorite is a whole wheat angel hair pasta.

All of the ingredients can be changed and you can put how ever much of one veggie you like. This is impossible to mess up!
