Florentine Chicken Alfredo Pasta

what you need
  • (For larger servings in parentheses)
  • 1 cup uncooked penne pasta (5 cups)
  • 1 Tbsp. butter (5 Tbsp.)
  • 1 pkg. [6 oz.] ready to use chicken breast cuts, cut into chunks (5 pkgs.)
  • 1/4 cup chopped fresh spinach (1 1/4 cups)
  • 1/4 cup roasted red peppers, dices (1 1/4 cups)
  • 1/4 tsp. garlic powder (1 tsp.)
  • 1/4 tsp. black pepper (1 tsp.)
  • 1 1/2 cups chicken broth (5 cups)
  • 3/4 cup Alfredo sauce (3 3/4 cups)
  • 1/4 cup grated parmesan cheese (1 1/4 cups)
make it
Cook pasta according to package directions. In large saucepan, melt butter and saute the chicken, spinach, and red pepper. Sprinkle with garlic powder and black pepper. You should saute only a few minutes, until the spinach is wilted.

Stir in the broth and Alfredo sauce. Cook until heated through, about four minutes.

Drain pasta and add to the mixture. Garnish with parmesan cheese.
