Fruity Dressing Main Dish Salad

what you need
  • 6 chicken tenders, baked & cut into bite-sized pieces
  • 1/4 cup fresh squeezed orange juice
  • 4 tsp. olive oil
  • 2 tsp. balsamic vinegar
  • 1 tsp. orange cranberry vinegar
  • 1/8 cup sliced raw almonds
  • 3/4 cup sliced fresh mushrooms
  • 2 kiwis, peeled and cubed
  • 8-10 cups cut romaine hearts or mixed greens
  • Salt & pepper to taste
make it
Bake chicken tenders at 350°F for 18 minutes, or until cooked through.

Cool while preparing other ingredients.

Cut up cooked meat. Toss with other ingredients and serve immediately.
Your favorite flavored vinegar may be substituted for orange-cranberry vinegar.

Cooked steak or turkey can be used in place of chicken tenders.

Using cold, precooked meat or leftovers cuts recipe time in half.
