Fudge Truffle Cheesecake

what you need
  • Crust
  • 1/3 box chocolate graham crackers
  • 1/3 cup sugar
  • 1/3 cup butter, melted
  • Filling
  • 12 oz. semi-sweet chocolate
  • 8 oz. cream cheese
  • 1 can sweet condensed milk
  • 4 eggs
  • 2 tsp, vanilla
  • Topping
  • Heavy cream
  • Chocolate
  • Candy bar

Melt chocolate in double boiler. Crush crackers in food processor. Add sugar and melted butter. Press in bottom of springform pan. Cover pan with foil.

In cream cheese, beat in condensed milk. Add melted chocolate, eggs and vanilla. Pour in crust.

Bake at 350 degrees F for about 1 hr. in a water bath till center in firm. Cool and remove from pan. Refrigerate. Top with chocolate ganache -- equal parts heavy cream and chocolate. Break candy bar and stick on top.
Notes
A small cheesecake but very rich. I used 53% dark chocolate bar.
