what you need
- 4 boneless skinless chicken breasts
- 2/3 block cream cheese
- 2/3 cup shredded jack cheese
- 2 cloves garlic, diced
- 1/4 cup scallions (about 5)
- 1/4 cup Anaheim pepper
- Salt and pepper to taste
- 4 strips apple wood bacon
- Melted butter

Preheat oven to 375°F. Butterfly the chicken breast to form a pocket. In a food processor, blend cream cheese and shredded jack. Add garlic, scallions and Anaheim pepper, and blend together.
Divide the mixture into chicken pockets and wrap with the bacon and secure with toothpicks. Place in baking pan and pour the butter over the chicken, you can't have too much butter.
Bake uncovered for 30 minutes or till chicken is done. Serve over rice and spoon gravy over rice and chicken. This deserves a good wine.
