Geary's Banana Nut Bread

what you need
  • 1/2 cup butter, at room temperature
  • 1 cup sugar
  • 2 eggs, at room temperature
  • 1 1/2 cups mashed ripe bananas
  • 2 cups all purpose flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 cup chopped nuts (pecans or walnuts)
  • 1 tsp. vanilla
make it
Preheat oven to 350 degrees. Beat butter in a large mixing bowl until it is fluffy. Gradually add sugar and beat until it is completely incorporated. Add eggs one at a time. Add bananas and beat into a smooth batter. Combine flour, baking powder, salt and cinnamon. Lower mixer speed and slowly add flour mixture just until wet (do not over beat). Stir in nuts and vanilla.

Pour into 9"x5"x3" loaf pan prepared with shortening and flour.

Bake for 50 minutes or until a toothpick inserted into the center comes out clean. Cool in the loaf pan for 10 minutes on a rack.
Notes
You could get creative by substituting macadamia nuts, hazelnuts, black walnuts or pistachios.
