Makes: 5 dozen Total Time: 1 hr 30 min
Category: Cookies Sub Category: Other

what you need
  • 1 cup sugar
  • 3/4 cup butter or margarine, softened
  • 1/4 cup molasses
  • 1 egg
  • 2 1/3 cups all-purpose flour
  • 1 tablespoon grated gingerroot
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger (increase amount if desired)
  • 1/4 teaspoon salt
  • Sugar to roll cookies
make it
1. Preheat oven to 375ºF. Mix 1 cup sugar, the butter, molasses and egg in large bowl. Stir in remaining ingredients except sugar.

2. Shape dough into 1-inch balls; roll in sugar. Place about 2 inches apart on ungreased cookie sheet; flatten slightly so doesn't roll around on cookie sheet.

3. Bake 5 to 7 minutes or until edges are set. Remove from cookie sheet to wire rack. Cool completely, about 30 minutes. Store in air tight container at room temp.
My grandma used to make this all the time. I know she used brown sugar also, but I can not find it on my recipe card...

Rated  by Tinysmom on 1/1/2009 I loved the taste of this fantastic cookie. Ginger is one of my favorite flavors, and in a cookie it is just stellar.
