Graces Oven Baked Chicken

what you need
  • 6 chicken breast quarters/or split chicken breasts
  • 2 Tbsp. vegetable oil/or canola oil
  • 1/4 cup soy sauce*
  • 1/4 cup teriyaki sauce**
  • 2 tsp. chicken seasoning salt/or seasoning salt - use less if you want less salt (I've seen low sodium varieties of this ingredient too! :) )
  • Salt and freshly ground pepper (optional); but freshly ground pepper is great!
make it
Wash chicken. Remove any fat under the skin, and clean throughly. Pat dry, place in baking dish and rub with veg. oil; even under skin.(this keeps the meat moist).

Drizzle with soy sauce/and or teriyaki sauce; under skin as well as on top. Then sprinkle the chicken seasoning salt or seasoning salt lightly over the chicken (under skin also!) ;then sprinkle with salt and pepper.

Bake at 375 degrees for an hour to one and a half hours.Broil till crisp, and serve with Kraft macaroni and cheese, potatoes, rice or any other pasta; and vegetable of choice.(Acron squash dotted with butterand sprinkled with brown sugar goes perfect with this chicken.
* Some brands are much different in taste and it's nice to try other brands for taste differences - they also have low sodium varieties.

** If you want to vary this recipe, otherwise omit it.

This recipe was created by my dear mother Grace L. Cole; who passed away in October of 1991.she was my very best friend and I still miss her greatly. She always made this recipe for her family with pride ,even after working all day and coming home exhausted. My father William; who I called; "Bill "'instead of Dad (I must have picked it up from my mother!),as a very young girl; loved this chicken dish. I now make it for my family and will pass it on to my three lovely daughters: Jennifer, Katie and Amy; and also my wonderful husband Mike, that I met in 5th grade; and now have been married to for almost 23 years now; after going steady for 8 yrs. I think my husband likes my cookin'! He’s still around! Love to all of you, and I hope you enjoy this recipe as much as we all do.
