Grammy Jo's Famous Salmon Patties

what you need
  • 1 can (12 oz.) pink salmon skin removed
  • 1/3 cup diced onion
  • 1 egg, lightly beaten
  • 1/2 cup all purpose flour
  • 1 1/2 tsp. baking powder
  • Vegetable oil
make it
Drain salmon reserving 2 Tbsp. juice. In a bowl, combine juice with all ingredients except oil; Mix well.

Evenly divide into 6 balls. Form into patties.

In a large skillet in very little hot oil, fry patties on each side until golden brown. Drain on paper towels.
Notes
I double this recipe and also find it takes more oil than mom's recipe calls for.
