Grandma Snowden's Skillet Cookies

what you need
  • 1 cup sugar
  • 1 cup chopped dates
  • 1 cup chopped pecans
  • 1 egg, well beaten
  • 1 tsp. vanilla
  • 2 1/2 cups crisp rice cereal
  • Bakers Angel Flake Coconut
make it
Mix sugar, dates, pecans, beaten egg and vanilla in a skillet. Be sure and stir frequently until starts to boil then stir constantly. SCORCHES EASILY! Boil for 4 minutes.

In larger bowl add crisp rice cereal. After mixture has boiled for 4 minutes, mix quickly with cereal.

Butter hands, roll cookie mixture into small balls (careful it will be very hot), and roll in Bakers Angel Flake Coconut. Let cool and you have easy and delicious cookies.
