Grandma Sophie's Cheese Bread

what you need
  • For bread dough:
  • 1 egg
  • Pinch of salt
  • 1 cup WHOLE milk, not skim or low fat
  • 1/4 cup sugar
  • 1 tsp. baking powder
  • 1/2 cup salted butter cut into pats
  • 2 1/2 cups bread flour
  • 1 1/2 tsp. bread machine yeast
  • Add later:
  • 1/2 cup raisins
  • For topping:
  • 1 small container cottage cheese, drained
  • 1/3 cup sugar
  • 1 egg yolk
make it
Preheat oven to 350°F. Set bread machine to dough. Put ingredients into bread machine in the order listed above. After 20 minutes add 1/2 cup raisins.

When the dough is ready put in a greased 9 x 12 pan. Cover and set on top of stove while making the topping. If the dough rises above the top of the pan punch it down so the topping won't slide off.

For topping, mix cottage cheese with about 1/3 cup sugar (adjust sugar to taste). Add 1 egg yolk and mix well. Spread on top of dough.

Bake for 1 hour.
Notes
Grandma made this by hand but I use a bread machine to mix the dough and I finish it in the oven.
