Gremolata Tilapia

what you need
  • 1 package Shake 'N Bake Italian Seasoned Coating Mix
  • 1/4 cup parsley
  • 1 tablespoon butter or margarine, melted
  • 4 tilapia fillets--can buy pre-packaged 4 oz. or single serving (or other medium-firm fish fillets)
  • 1/4 teaspoon seasoned salt, seasoned pepper, or lemon pepper
  • 1 tablespoon lemon juice
make it
1. Preheat oven to 425°F. Line rectangular pan, 13x9x2 inches, with aluminum foil; spray foil with cooking spray to prevent sticking. Mix Shake ‘N Bake, parsley, and butter.

2. Dip fish into Shake 'N Bake mixture and place in pan. Sprinkle with seasoned salt or pepper. Drizzle with lemon juice. Spoon additional crumb mixture over each piece; press lightly.

3. Bake uncovered 15 to 20 minutes or until fish flakes easily with fork.
Goes well with steamed vegetables and rice. Can also be used with angel hair pasta.
