Makes: 4 (6 oz.) servings Total Time: 1 hr
Category: Dinner Entrees Sub Category: Vegetarian Entrees

what you need
  • 1.5 cups flour (I used whole wheat)
  • 2 eggs or equivalent egg substitute, very well beaten
  • 1 cup milk, divided
  • 1 cup cheese (I used white cheddar)
  • Optional additions: bacon, ham, diced tomatoes, etc.
make it
Preheat oven to 425°F. Grease/flour a 9-inch pie pan (make sure it's very well coated. Combine flour, eggs, and 1/2 cup of milk until smooth. Add remaining 1/2 cup of milk, cheese, and extras; mix till well blended.

Pour into greased pan.

Bake 25-30 minutes or until top is slightly browned. Remove from oven and add extra sprinkling of cheese, if desired. Let sit 5-10 minutes before slicing.
Notes
Serves 4 as a main dish, a few more as a side. YUMMY!

This is, hands-down, the simplest, most delicious, kid-friendly recipe EVER!
