Grilled Peanut Butter and Banana Split Sandwich

what you need
  • 2 slices 40 calorie wheat bread
  • 1 tsp. butter
  • 1 Tbsp. reduced-fat creamy peanut butter
  • 2 tsp. honey
  • 1/2 tsp. semi-sweet chocolate mini-chips
  • 1 large strawberry, thinly sliced
  • 1/2 banana, cut lengthwise into 3 slices
  • 1 Tbsp. pineapple jam (no sugar added)
make it
Spread one side of each bread slice with 1/2 tsp. butter.

Combine peanut butter and honey; spread on one side of 1 bread slice. Sprinkle with chocolate mini-chips; top evenly with strawberry and banana slices.

Spread pineapple jam over plain side of remaining bread slice. Carefully assemble sandwich.

Heat a small nonstick skillet over medium-high heat. Add sandwich, and cook 2 minutes per side until lightly browned.
Dust with powdered sugar and decorate with strawberry slices if desired.
