Grilled Teriyaki Chicken and Goat Cheese Salad

what you need
  • 1 lb. boneless skinless chicken thighs
  • A.1. Teriyaki Marinade
  • 1/2 cup pine nuts
  • 2 hearts of romaine lettuce
  • 1/2 pint grape tomatoes
  • 1 cup dried cranberries
  • 1 container (8 oz.) crumbled goat cheese
  • 1/2 cup balsamic vinaigrette
make it
Marinade chicken in A.1. Teriyaki Marinade.

Brown pine nuts in a non-stick pan and set aside to cool. Grill marinated chicken and set aside to cool.

While chicken is grilling, chop romaine hearts and put in large glass bowl. Add in grape tomatoes, cranberries, goat cheese and pine nuts. Drizzle balsamic vinaigrette over the top and toss. Serve with cooled chicken, cut into slices, on top.
This is a super easy, delicious and healthy salad - it makes a great meal that takes almost no time to prepare. Enjoy!
