Hawaiian Banana Nut Bread

what you need
  • 3 cups all purpose flour
  • 2 cups sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup chopped nuts
  • 3 eggs, beaten
  • 1 cup vegetable oil
  • 2 cups mashed bananas
  • 1 can (8 oz.) crushed pineapple, drained
  • 2 teaspoons vanilla
make it
Combine dry ingredients, stir in nuts, set aside. Combine remaining ingredients to dry, stir just until moistened.

Spoon batter into 2 greased and floured 9 x 5 x 3 loaf pans. Bake at 350 degrees for 1 hour 5 minutes or until done. Cool 10 minutes. Remove from pans and cool completely.
Notes
These freeze very well. I have also made these into muffins instead of the loaves.

Rated  by a cook on 4/16/2009 Enjoyable, but a bit sweet, I might try to use at least 1/4 less sugar next time. Watch your cooking time - I used regular metal pans (not dark non-stick) that were the right size, and it only took 45-50 min. to cook. (my oven is fine for other recipes)
