HEALTHY, Cheap, and Easy Taco Soup

what you need
  • 1 can black beans
  • 1 can kidney beans
  • 1 can corn
  • 1 can pinto beans
  • 1 can diced tomatoes
  • 1 jar TACO BELL Salsa
  • 1 packet TACO BELL Taco Seasoning
  • 1 packet KRAFT Ranch Dressing Mix
  • Toppings:
  • KRAFT Shredded Jack or Cheddar Cheese
  • Small tortilla chips (or lightly crushed big ones)
  • Sour cream
  • Diced green onions
  • Chopped cilantro
make it
In a large pot, mix together all of the canned ingredients. Do NOT drain the cans, the "juices" help make the soup. Add in the taco seasoning and ranch dressing mix. Mix thoroughly.

Allow the soup to simmer for 20 minutes or more. The longer it simmers, the better the flavors meld together.

Serve in topped with your favorite Mexican toppings some of which are listed above... ENJOY!
Notes
This recipe is great simmered in a crock-pot. The longer it simmers, the better the flavor. For parties, cooking in the crock-pot is ideal. This soup is a favorite at all of our family parties!

Rated  by aliachaudhry on 9/21/2008 I got this recipe from a friend and it was great. It help0s that it's all in one pot....less to wash! I mixed some ground meat in with this also. I just browned the meat in the pot with some onions and then added the undrained canned ingredients. Also, I substituted Rotel for the diced tomatoes AND added a can of Jalapeño Ranch Style beans (undrained) along with the pinto beans.
