what you need
  • 1 pound lean or extra lean ground beef (or turkey)
  • 1 small onion chopped
  • 1 package of onion soup
  • 1 1/2 cups of sodium free chicken stock
  • 1/2 bag whole wheat egg noodles
  • 1 cup frozen peas
make it
Brown the meat and add onions half way into browning. Add the onion soup mix and add 1 cup of the chicken stock. Stir together and let it simmer for about a minute. Then add the uncooked egg noodles to the same pot. Add more chicken stock if needed.

Cover pot and let it simmer until noodles are almost cooked, about 5 minutes. Add the peas and let it cook for another couple of minutes with the lid off. The liquid should cook down and the dish should thicken a bit.
Notes
You can also add canned tomatoes or other veggies. I don't add salt because the onion mix is so salty. I like to serve it with a fresh salad.
