Heather’s Loaded Baked Potato Soup

what you need
  • 2 lb. baking potatoes
  • 30 oz. chicken broth
  • 2 cups Half-and-Half
  • 2 cups Velveeta Cheese, cubed
  • 8 pcs bacon, cooked, crumbled
  • 2-3 green onions
  • Sour cream for garnish
make it
Peel and chop potatoes. Place into microwave safe bowl and microwave for 10 minutes, stirring every 2 1/2 minutes.

Put potatoes in soup pot and add broth and Half-and-Half. Bring to boil. Simmer for 5 minutes.

Add cheese, bacon, and green onions and continue to simmer until cheese is melted and thoroughly mixed. Add sour cream for garnish.
If soup is too thin, let stand for a couple of minutes until thickened to your liking.
