Herb and Cheese Oven Fries

what you need
  • 3 all-purpose potatoes, such as russet, cut into thin wedges
  • 2 or 3 tablespoons extra virgin olive oil (EVOO), just enough to coat potatoes
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper
  • 1/2 cup grated Parmigiano-Reggiano
make it
Preheat over to 500°F. Places potato wedges on a cookie sheet. Drizzle with just enough EVOO to coat. Season with Italian seasoning, salt, and pepper.

Roast potatoes and turn after 15-30 minutes.

Sprinkle cheese liberally on potatoes and roast another 10 minutes.

Rated  by a cook on 8/11/2008 Great Flavor! I added garlic salt to mine. Cook time is too long if you cut your potatoes fairly thin. I would recommend cooking for 10 minutes on each side and then 2 more minutes after adding the cheese. I will definitely do this one again!
