Hush Puppy-Fried Shrimp

what you need
  • 1 1/2 pounds unpeeled medium-sized fresh shrimp
  • Vegetable oil
  • 3/4 cup Bisquick baking mix
  • 3/4 cup cornmeal
  • 1/4 cup finely chopped fresh cilantro or parsley
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon ground red pepper (cayenne)
  • 1/4 to 1/2 teaspoon ground cumin
  • 1/4 to 1/2 teaspoon chili powder
  • 3/4 cup beer
  • 1 egg, lightly beaten
make it
Peel and devein shrimp; pat dry with paper towels. Heat 1 inch oil in Dutch oven to 375 degrees F. Combine baking mix and next 7 ingredients. Add beer and egg, stirring until batter is smooth. Coat shrimp with batter.

Cook in hot oil about 2 minutes or until brown. Drain on paper towels. Serve hot with salsa, tartar sauce or remoulade sauce for dipping if desired.
Sauces can be served warm or cold according to the persons taste.
