what you need
  • 1 package pecan shortbread cookies, crushed
  • 1 stick margarine, melted
  • 2 small packages Jell-O Brand Vanilla Flavor Instant Pudding Mix
  • 2 cups milk (2% is fine)
  • 2 cups butter pecan ice cream, softened
  • 2 cups Cool Whip whipped topping, thawed, divided
  • 2 crushed toffee candy bars (toffee chips are ok also)
make it
Empty cookies into a large Ziploc bag and crush till fine. In a large bowl, mix cookie crumbs and melted margarine. Spread mixture in a 9 x 13 baking dish and place in refrigerator while mixing other ingredients.

Mix both boxes of pudding with milk. This will start to thicken. Add softened ice cream and 1 cup softened whipped topping. Mix well till blended. Spread mixture over crust.

Place in refrigerator for 2 hours, remove and spread remaining whipped topping over dessert and sprinkle crushed candy bars on top. Enjoy!
Notes
This is one of my family's favorite desserts. It’s easy to make and last a couple days when left in refrigerator. Because it’s so rich, I only make it for special occasions. I hope whoever tries it likes it as much as we do.

I got this recipe about 14 years ago from a dear friend.
