Impossible Coconut Pie

what you need
  • 2 cups milk
  • 3/4 cup sugar
  • 1/2 cup baking mix
  • 1/4 cup butter
  • 4 eggs
  • 1 1/2 tsp. vanilla
  • 1 cup flaked or shredded coconut
make it
Preheat oven to 350 degrees F. Lightly grease pie plate, 9-inch x 11 x 4 inches.

Place all ingredients in blender container. Cover and blend on high speed for 15 seconds. Pour into pie plate.

Bake until golden brown and knife inserted in center comes out clean, 50 to 55 minutes. Refrigerate any remaining pie.
This pie carries well, can freeze. It goes good at church functions, club meeting and always bring home a clean pie plate. Recipe is asked for real often when served.

Rated  by princessshelby01 on 9/26/2009 I had first found this recipe on a box of "Bisquick" baking mix years ago. It tastes very similar to a sugar cream pie. What makes it "impossible" is that it forms it's own crust. Very crowd pleasing and delicious!
