Impossible Taco Pie

what you need
  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 2 envelopes (1-1/4 oz. each) taco seasoning mix
  • 3/4 cup baking mix (i.e. Bisquick, Jiffy, etc.)
  • 1-1/4 cups milk
  • 3 eggs
  • 1 cup shredded cheddar cheese
  • 1/4 head lettuce, shredded
  • 1 tomato, diced
  • 1/3 cup sliced olives
  • Sour cream (optional)

Preheat oven to 400°F. Grease square baking dish, 8x8x2-inches. Cook and stir ground beef and onion in 10" skillet until beef is brown; drain. Stir in seasoning mix; spoon into baking dish.

Beat baking mix, milk, and eggs with wire whisk or hand beater until almost smooth, about 1 minute. Pour over beef in baking dish.

Bake until knife inserted in center comes out clean, about 25 minutes. Sprinkle with cheese. Bake until cheese is melted, about 2 minutes. Cool 5 minutes. Garnish with lettuce, tomato, olives and, if desired, sour cream.

Rated  by rsumja on 8/29/2006 Now that I have this recipe, my family demands it once a week! It is alot cleaner for my kids than tacos since everything is all together in a casserole. Excellant!!
