Isis's Sweet Potato & Squash Bake

what you need
  • 1/4 cup butter, melted
  • 1/4 cup packed dark brown sugar
  • 3/4 tsp. salt
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. pepper
  • 2 lb. sweet potatoes, peeled, cut into 1" chunks
  • 1 butternut squash (about 2-1/4 lb.), peeled, cut into 1" chunks
  • 1 can (8 oz.) crushed pineapple in juice
  • 2 cups miniature marshmallows
  • 1/2 cups glazed pecans (store bought)
make it
Preheat oven to 375°F. Coat a 2-quart baking dish with cooking spray. In large bowl, combine butter, sugar, salt, cinnamon and pepper. Add sweet potatoes, squash and pineapple with juice. Toss until well coated.

Transfer to baking dish.

Bake, stirring twice, until potatoes and squash are tender, about 1 hr and 15 min. Sprinkle with marshmallows and pecans. Bake for 5 min or until lightly browned. Serve immediately.
