what you need
- 1 lb. Italian sausage
- 1/2 cup diced onions
- 1 garlic clove, minced
- 1 cup diced zucchini
- 1 cup sliced mushrooms
- 1/4 tsp. ground red pepper
- 1/2 tsp. Italian seasoning
- Salt and pepper to taste
- 1 can petite diced tomatoes
- 1 can chicken broth
- 3 cups water
- 3 Tbsp. tomato paste
- 1 cup small uncooked pasta
- Shredded mozzarella cheese
make it
1. Brown the meat in a large pot.
2. Add onions, garlic, zucchini, mushrooms, ground red pepper, Italian seasoning, some salt and pepper and cook on medium heat for 1 min.
3. Add petite diced tomatoes, chicken broth, water, and tomato paste.
4. Bring it to boil on medium heat.
5. Add pasta and more seasoning if desired and cook until pasta is done and vegetables are tender.
6. Put in a bowl and sprinkle with cheese on top.
Notes
The quantity of the ingredients is estimated because I always eyeball everything and cook to taste. So you might have to put more/less water or the tomato paste and the seasonings.
But if you get it right it's really good.
