what you need
- 2 1/2 cups long grain white rice
- 4 1/2 cups water
- 1/2 lb. or 1 lb. ground beef
- 1 small onion, diced (optional)
- 1 large can diced tomatoes
- 1 can spinach or 1 cup frozen spinach (optional)
- 2 Tbsp. oregano
- 2 Tbsp. black pepper
- 2 Tbsp. salt
- 2 Tbsp. garlic powder
- 2 Tbsp. onion powder
make it
In a pot add rice and water and cook until done.
In a pan, brown the ground beef then drain. To the same pan, add the onions and cook until clear. Add the ground beef back to the pan along with the tomatoes and spinach, oregano, black pepper, salt, garlic powder and onion powder. Let simmer for about 10 - 15 minutes.
When rice is fully cooked, combine the rice with the beef mixture and mix until well incorporated. Serve with your favorite bread and a side salad.
Notes
This meal is very delicious and very inexpensive to make and also goes a long way.
I serve this as a main dish, but you can serve it as a side dish as well.
You can also use diced or ground turkey or chicken instead of the ground beef.
For all you vegetarians out there, just add an extra can of tomatoes and spinach and a can of black eyed peas or your other favorite pea or beans and the meal is just as filling and just as delicious.
Enjoy!
