Key Lime Pie Cheesecake

what you need
  • 1 cup corn flakes crumbs or graham cracker crumbs
  • 1/3 cup melted margarine
  • 1 pkg. (8 oz.) cream cheese, softened
  • 1 can Eagle (Magnolia or Dime) Brand Sweetened Condensed milk
  • 1/2 cap real lemon reconstituted lemon or lime juice
  • 1 tsp. vanilla
  • 1 can (1 lb. 5 oz.) chilled cherry pie filling

Crust: Mix crumbs & margarine in 9” pie pan. Press firmly & evenly over sides & bottom of pan to form crust.

Beat cream cheese until fluffy & light. Add sweetened condensed milk & blend thoroughly. Stir in lemon/lime juice & vanilla. Turn into crust.

Refrigerate 3-4 hrs or until firm. (Do not freeze.) Top with chilled cherry filling before serving or other thickened fruit. Chill.
To create a Key Lime Pie Cheesecake - substitute the lemon or lime constitute with about 1/4 cup of fresh squeezed lime juice and top with lime zest.

Refrigerate overnight for best results.
