King Ranch Style Casserole

what you need
  • 1 whole chicken, cut up
  • 1 large onion, chopped
  • 1/2 large green pepper, chopped
  • 1 pkg. flour tortillas
  • 2 cups Kraft Velveeta Cheese
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can chicken broth
  • 1 can Ro*Tel tomatoes
  • 2 teaspoons chili powder
  • Salt & pepper to taste
make it
Boil chicken, allow to cool and debone. Chop onion and green pepper. Tear tortillas into small pieces. Grate cheese.

In blender mix: mushroom and chicken soups, chicken broth, Ro*Tel tomatoes, chili powder, salt & pepper.

In casserole style bowl, layer chicken, onion, pepper, tortillas, cheese and blender mixture. Repeat again.

Bake in 350°F oven for 45 minutes to 1 hour. Add additional cheese to top; continue baking until cheese is melted.
Notes
We love this casserole. Add a nice green salad, enjoy. Not only is this a great dish, it is very easy to prepare.
