Lindy's Cheesecake (Low-Carb Version)

what you need
  • Crust
  • 1 cup ground pecans, walnuts, or almonds
  • ¼ cup softened butter
  • ¼ cup Splenda (for baking)
  • Filling
  • 5 packages (8 oz. size) cream cheese
  • 1 ¾ Splenda (for baking)
  • 3 Tbsp flour
  • 1 ½ tsp grated lemon peel (or lemon juice)
  • ¼ tsp vanilla extract
  • 5 eggs
  • 2 egg yolks
  • 1/4-cup heavy cream

Preheat oven to 400F. Prepare an 11 x 14 glass baking dish by coating with baking spray. Blend nuts, butter and Splenda. Press mixture into bottom of dish. Bake 10 minutes. Remove from oven.


Preheat oven to 500F. In a large bowl, combine cheese, Splenda, flour, lemon, and vanilla. Beat at high speed just to blend.

Beat in eggs and egg yolks one at a time. Add cream, beating until combined. Pour into crust.

Bake 10 minutes. Reduce oven temperature to 250F and bake 1 hour longer. Cool and refrigerate three hours or overnight. Enjoy!
