Linguine in White Clam Sauce

what you need
  • 1 package (16 ounce) linguini pasta
  • 1/2 cup olive oil
  • 1/2 cup butter
  • 4 cloves minced garlic
  • 4 (6.5oz) minced clams, with juice reserved
  • 1 tablespoon lemon juice
  • Ground black pepper to taste
  • Red pepper (optional)
  • 1/4 cup heavy cream-to thicken (optional)
  • 1/4 cup choppped fresh parsley
  • 1/2 tsp dried basil
  • Freshly grated parmesan cheese
  • Freshly grated Romano cheese

Cook pasta according to package directions.

In a large skillet saute the garlic iand half of the fresh parsley n the olive oil and butter. Add the liquid from the clams, white wine, lemon juice, pepper ,red pepper & heavy cream (if using). Sautee for a minute of two. Add the rest of the parsley and basil, stir well. Cook for 10 minutes. Stir in clams until heated through.
Top with freshly grated Romano cheese & parsley

Serve sauce warm over pasta and add a generous topping of parmesan cheese.
Notes
**The heavy cream is to be used sparingly to thicken the sauce to desired consistency.
