Makes: 2 8" cheesecakes Total Time: 1 hr 5 min

what you need
  • 1 package (3 oz.) lemon flavor Jell-O
  • 1 cup boiling water
  • 2 cups reduced fat cottage cheese
  • 1 container (8 oz.) lite non dairy frozen whipped topping
  • 2 reduced fat ready made graham cracker crusts (8" size)
  • 2 cans your favorite pie filling (optional)
make it
Place Jell-O and boiling water in blender and blend until Jello is dissolved. Add cottage cheese, 1 cup at a time and blend until no lumps remain after each addition.

Add whipped topping 1 cup at a time and blend until no lumps remain after each addition.

Pour into crusts and refrigerate until set. About 1 hour. Top with pie filling if desired.
Notes
I love cheesecake, and with this recipe I can indulge without feeling guilty.
