what you need
- 2 cups all purpose flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup butter, almost completely melted
- 3/4 cup brown sugar
- 2 large eggs, beaten
- 2-1/3 cups mashed over-ripe bananas (about 3-1/2 to 4 medium bananas)

Preheat oven to 350 degrees. Lightly grease a 9x5-inch loaf pan. In a large bowl, combine flour, baking soda, and salt.
In a separate bowl, cream together the butter and brown sugar. Stir in the eggs and mashed bananas until well-blended. Stir banana mixture into flour mixture. Pour batter into prepared loaf pan.
Bake for 60-65 minutes, until a toothpick inserted near the center of the loaf comes out clean. Let bread cool in pan 10 minutes; then turn out onto wire rack to cool completely.
Notes
For a great twist to this bread, add a handful of chocolate chips, nuts, or marischino cherries.
Adding cherries plus chocolate chips makes this bread into a great "banana split" bread!
