Lori's Baked Pork Chops and Veggies

what you need
  • 4 pork chops with bone
  • 1/2 tsp. seasoned salt
  • 1/4 teaspoon garlic powder
  • 2 cups frozen hash browns, thawed
  • 1 cup frozen mixed veggies, thawed
  • 1 can cream of celery coup
  • 1/2 cup of sour cream
  • 1/4 tsp. thyme
  • 1 cup stuffing (or croutons coarsely chopped)
make it
Heat oven to 350. Spray 13 x9 glass baking dish with cooking spray. Sprinkle pork chops with seasoned salt and garlic powder.

Heat 12-inch non stick skillet over medium-high heat. Sear pork chops for 4 minutes on each side. Then place pork chops in baking dish.

In large bowl, mix potatoes, veggies, soup, sour cream and thyme. Spoon mixture over pork chops and cover with foil. Bake for 30 minutes.

Sprinkle with stuffing mix and press into mixture gently. Bake uncovered for another 20-25 minutes or until meat is no longer pink.
Notes
Simple, easy and most of these items are in your everyday pantry. A hit in my family who are picky eaters!!!

Rated  by TerriTBerri on 2/13/2006 This was excellent. I did not have cream of celery soup on hand, so I used cream of mushroom. Can't wait to try it with the celery soup.
