Lori's Chicken BLT Salad

what you need
  • 4 small boneless chicken breast halves
  • 1 pouch Shake 'N Bake Extra Crispy Coating Mix
  • 1 bag salad (in produce aisle)
  • 1 cup tomato wedges
  • 4 slices bacon, cooked & crumbled
  • 1/4 cup ranch dressing
  • 1/2 cup 3 cheese crumbles
make it
Preheat oven to 400°F. Coat chicken with coating mix as directed on pkg. Place in a shallow baking pan. Bake 20 to 30 min. Let stand 5 minutes. Cut into slices.

Toss lettuce with tomatoes, bacon and dressing.

Spoon evenly onto 4 plates; sprinkle with cheese and top with chicken.
This dish is so good at family gatherings to make more just double the recipe.
