Lou's Marinated Veggie Salad

what you need
  • 1 head broccoli
  • 1 head cauliflower
  • 2 small jars whole mushrooms
  • 1 can garbanzo beans
  • 1 jar green olives (pitted and pimento stuffed)
  • 1 jar pitted black olives
  • 3 carrots, thinly sliced
  • 2 zucchini, sliced
  • 1 pint cherry tomatoes
  • Dressing:
  • 1.5 cups extra light olive oil
  • 0.5 cups vinegar
  • 1 tsp. garlic salt
  • 1 tsp. salt
  • 1 Tbsp. Accent
  • 1 Tbsp. sugar
  • 1 Tbsp. dill
make it
Cut or break broccoli and cauliflower into bite-sized pieces. Add all other ingredient except zucchini and tomatoes.

Mix dressing ingredients well. Add dressing and lightly toss.

Put zucchini and tomato in salad 3 hours before serving.
Notes
This salad improves with time and can easily be prepared a day in advance.
