what you need
- 1 3/4 cups all purpose flour
- 1/2 tsp. baking soda
- 1 1/4 tsp. baking powder
- 3/4 tsp. salt
- 1/2 tsp. cinnamon (optional)
- 1/3 cup applesauce
- 2/3 cup sugar
- 1 cup very ripe mashed bananas
- 2 eggs, slightly beaten
- 1 Tbsp. milk
- 1 tsp. vanilla extract
- 1/3 cup walnuts (optional)

Preheat oven to 350º F. Spray an 8x4" loaf pan with nonstick cooking spray. In a bowl, sift to combine flour, baking soda, baking powder, salt and cinnamon (if using). Set aside. In a separate bowl, combine applesauce, sugar and bananas. Mix well. Add eggs, milk and vanilla. Gradually stir in dry ingredients. Stir only until JUST combined. DO NOT OVER MIX. If using, fold in nuts.
Transfer to loaf pan and then to the oven.
Bake for 60-64 minutes, or until toothpick inserted comes out clean. Let cool in pan for 10 minutes, then transfer to cooling rack.
Notes
If you want to make this almost fat free, use fat free egg substitute. Nuts will add fat; but it's a good fat-the monounsaturated kind.
You can either eat this warm, right out of the oven(it will have a crunchy crust), or, for a more developed flavor, and softer crust, wrap in plastic wrap and let sit in room temperature overnight.
This bread will survive longer if kept in the refrigerator.
