Low Fat, High Fiber Pancakes

what you need
- 1 cup low fat or fat free cottage cheese
- 1 cup old fashioned oatmeal
- 1 cup egg whites
- 1 Tbsp. vanilla
make it
In a bowl, combine all ingredients. Stir.
Grease a 5 inch frying pan. Warm over medium heat.
Pour batter in 1/4 cup increments into pan. Spread into a thin layer. Cook about 3 minutes. Flip. Cook another 3 minutes.
Notes
Excellent warm with sliced strawberries (or any fruit) as a side. Also very good cold. I like to make a batch on Sunday so that I can take 2 to work for breakfast each morning.
