Mango Salsa

what you need
  • 2 mangos, peeled and cubed (about 1/2" cubes)
  • 1 red or green bell pepper, seeded and finely chopped
  • 1 small purple onion, diced
  • 3 Roma tomatoes, diced
  • 3 small jalapeno peppers, finely diced
  • 2 tablespoons cilantro, finely chopped
  • Juice of 2 limes (don't substitute, use the real thing)
  • Salt and pepper to taste
make it
Mix all ingredients together and serve with tortilla chips or snack crackers.

This salsa will keep in the refrigerator for at least 4 days, so it is easy to make and store for a party the night or afternoon before.
I sometimes use this on warm flour tortillas filled with scrambled eggs and Kraft Colby cheese as a wrap-up for a quick one-person meal.
