Mango Salsa by Michele

what you need
  • 1 can Del Monte Sunfresh Mango, diced
  • 1 red pepper
  • 1 red onion, chopped
  • 1 jalapeno, chopped
  • 2 Tbsp. apple cider vinegar
  • 2 Tbsp. sugar
  • Salt and pepper to taste
make it
Dice up mango. Chop red pepper, onion, and jalapeno. Mix into a medium size bowl.

Mix vinegar, sugar, salt and pepper to taste and add to the bowl.

Stir and chill before serving.
Notes
I triple the vinegar and the sugar for this recipe. I like a lot of juice. However when I serve it, I do drain some of the excess off.

Rated  by portwine123 on 8/10/2008 This salsa was a big hit! Although next time I wouldn't use as much purple onion. It was too strong, over powered everything else to me. l also I wouldn't use all the lime juice at once unless you were planning on eating it all immediately.
