Meatless Chili Beans

what you need
  • 1 cup dry kidney or pinto beans
  • 3.5 cups water
  • 1 Tbsp. chili powder
  • 1/2 tsp. cayenne pepper*
  • 1/2 tsp. garlic powder
  • 1/4 tsp. ground cumin
  • 1 small onion (or 1/4 cup dry onion flakes)
  • 1/4 cup ketchup
  • 1 Tbsp. beef soup stock powder or bouillon powder (optional)
make it
Place beans in bowl, cover with boiling water. Combine all other ingredients in 4-6 quart pressure cooker over medium heat.

When liquid in pressure cooker is near boiling, drain beans and add to cooker.

Cover and cook (40 minutes at 15# pressure for pinto beans, 30 minutes at 15# for kidney beans. (Time may be reduced by 10 minutes if bean were soaked overnight.)
*adjust cayenne pepper to taste

Serve over rice.

Excellent as a meal with fresh cornbread.
