Mediterranean Couscous Salad

what you need
  • 1 pkg. (10 ounce) instant couscous
  • 1/4 cup olive oil
  • Juice of 2-3 limes
  • 1 can chick peas, rinsed and drained
  • 1 red pepper, finely diced
  • 1/2 red onion, finely diced
  • 1 medium cucumber, seeded and diced
  • 2 Roma tomatoes, seeded and diced
  • 1/2 cup diced olives (I used Kalamata olives)
  • 1/4 cup diced parsley or cilantro (one handful before dicing)
  • 1 pkg. (5 ounce) Kraft Crumbles Feta Cheese
  • Salt and pepper to taste
make it
Prepare couscous as directed on package.

Mix olive oil and lime juice in large bowl. Add couscous, chick peas, vegetables, and remaining ingredients; mix well. Add salt and pepper to taste.

Cover and refrigerate for two hours to allow flavors to blend.
Notes
Both olives and feta cheese can be very salty depending on what type you use, so add salt after ingredients are mixed.

Also, great as a main dish with grilled chicken on top.
