Melt In Your Mouth Pork Chops

what you need
  • 2-3 Tbsp. oil
  • 2 cups finely crushed white cracker
  • 3 whole eggs
  • 4-6 lean pork chops
  • 1-2 cans tomato soup
make it
In a large fry pan add oil, may add more if needed or use oleo too. Heat pan to med heat. In two separate bowls put crackers in one and beat the eggs in another. Then dip chops or lions in each starting with the egg first, dip 2x's if you would like them with a thicker coating.

Then fry in the oil till golden brown. Remove as they brown and place in a 9x13 glass baking dish. Spoon tomato soup over each, covering well. Cover with foil.

Bake at 350°F for 35 minutes, then remove foil, and bake for 10-15 minutes more or till fork tender.
My mother made these for our family of 6, one was never enough. They will stay moist and fall apart in your mouth. I love to make this recipe not only because they are delicious, they bring back loving memories.
