Mexican Fajita Casserole

what you need
  • 1 lb. lean ground beef
  • 1 Vidalia or Mexican onion, chopped
  • 1 small green pepper, chopped
  • 1 orange pepper, chopped
  • 2 cloves garlic, finely minced
  • 1 package fajita mix
  • 1 cup water
  • 1 cup TACO BELL Salsa
  • 4 soft taco tortillas, cut into 1-1/2 inch squares
  • 1/2 cup Kraft Mexican Style Cheese
  • Breakstone's Light Style Sour Cream
  • Refried beans
make it
Brown ground beef over medium heat. Drain excess fat. Add chopped onions, peppers and minced garlic. Cover and cook over medium heat for 5 minutes.

Add fajita mix, water and salsa. Bring to a boil. Reduce heat to a medium simmer. Cover and simmer for 5 minutes.

Stir in tortillas. Sprinkle cheese on top, turn off heat. Cover and let stand for 5 minutes or until cheese is melted. Top with sour cream. Serve with side of refried beans.
