what you need
- 2 lbs. ground beef
- 1 egg
- 1 cup cornmeal
- 1 pgk. taco or enchelada seasoning
- 1 cup shredded sharp cheddar/monterey jack cheese
- 1 cup salsa
make it
Preheat oven to 400 degrees. In a large bowl, combine ground beef, egg, cornmeal, and seasoning mix.
Press meat mixture in a loaf pan, cover with foil, and bake for 45 minutes. Uncover, bake additional 10 minutes.
Remove from oven, cover with cheese and pour salsa of choice over servings.
Notes
Depending on your family's taste and desired "heat", you can add a can of green chilies to the mix and top with jalapenos and/or fresh sliced avocados. Goes great with Mexican rice and refried beans.
