Mexican Style Eggs- Huevos a la Mexicana

what you need
  • 1-2 jalepeno pepper, finely chopped
  • 1/4 finely chopped onions
  • 2-3 roma tomatoes, finely chopped
  • 8 eggs, well beaten
  • 1 Tbsp. oil
make it
Finely chop the pepper, onion, and tomato. Beat the eggs to your liking.

Preheat oil in frying pan or skillet. Fry up the onion, pepper, and tomato until pepper and onion are soft.

Mix in the eggs. Let cook until the eggs are completely cooked. Serve and enjoy.
Notes
if you don't like spicy foods you can put in more tomatoes or eggs or you can use bell peppers(which are sweet) insterad of the jalepenos.
serve with 6 in tortillas or wrapped in a 10-12 in. tortilla.
