Mike's Banana Bread (or How to Make Dessert When You Forgot To Get the Butter!)

what you need
  • 1 pkg. (8 oz.) Philadelphia Cream Cheese, softened
  • 1 cup brown sugar
  • 4 eggs
  • 2 tsp. vanilla
  • 6 mashed bananas
  • 2 1/2 cups all-purpose baking mix
make it
In large mixing bowl, mix together cream cheese, brown sugar, eggs, vanilla and bananas until smooth. Then fold in baking mix 1/2 cup at a time, mix until smooth.

Pour equal amounts into 2 (9") bread pans.

Bake at 350°F for 50-60 min.
Notes
Options: add 1/4 cup chopped or minced walnuts for flavor.

Substitute: 1/2 cup granulated sugar and 1/2 cup molasses for brown sugar.

Spread cream cheese frosting over cooled loaf for decoration.
