what you need
  • 1 cup all-purpose flour
  • 2 cups chopped pecans, divided
  • 1 stick oleo, melted
  • 2 Tbsp. sugar
  • 1 pkg. (8 oz.) cream cheese, softened
  • 1 cup powdered sugar
  • 2 Tbsp. almond extract (vanilla extract ok too)
  • 1 large tub Cool Whip, divided
  • 1 large box Jell-O Chocolate Instant Pudding
  • 3 cups milk
make it
Combine flour, 1 cup chopped nuts, melted oleo and sugar in bowl. Mix by hand and press into 9x13 pan. Bake in oven at 350 degrees F for 12-15 minutes till lightly browned on top. Let baked dough-like mixture cool and then make crumbs with fork.

Cream the cheese, powdered sugar, extract, and 1 cup of Cool Whip. Pour on top of crumbs in same pan.

Mix pudding with 3 cups milk according to directions and pour on top of cream cheese mixture. Put remaining Cool whip on top pudding and sprinkle remaining 1 cup of nuts on top of Cool Whip.

Refrigerate for 4 hours.

Rated  by a cook on 1/13/2009 This is a great recipe. It's light and delicious. The problem is, you can't stop eating it. It's wonderful.
