Mini Turkey Meatloaves

what you need
  • 1 pound lean ground turkey
  • 1 medium zucchini, shredded
  • 1 medium carrot, peeled and shredded
  • 1 cup finely chopped onion
  • 1 garlic clove, minced
  • 1 cup red bell pepper, finely chopped
  • 1/3 cup dry whole-wheat couscous
  • 1 large egg, lightly beaten
  • 2 Tbsp. Worcestershire sauce
  • 1 Tbsp. Dijon mustard
  • 1/2 tsp. freshly ground black pepper
  • 1/4 tsp. salt
  • 6 Tbsp. good quality barbecue sauce

Preheat oven to 400 degrees F. Generously spray a nonstick muffin pan with cooking spray. Gently mix turkey, zucchini, carrot, onion, garlic, bell pepper, couscous, egg, Worcestershire, mustard, pepper, salt in a large bowl, preferably with your hands.

Divide the mixture between the 12 muffin cups. Bake for about 20 minutes.

Add 1/2 Tbsp. barbecue sauce per muffin and cook for an additional 5 minutes. Serve 3 muffins per person.
Notes
Be sure to serve these healthy mini meatloaves with a whole grain and a nice salad or other vegetables of your liking. You can also add cheese to this recipe.
