Mixed Vegetable and Chicken Soup

what you need
  • 1 tablespoon oil
  • 2 shallots, sliced
  • 1 chicken drumstick, meat removed and shredded
  • 2 cups (500ml) water
  • 1 chicken bouillon cube
  • 1/4 carrot, diced
  • 1 potato, diced
  • 1/2 large onion, chopped
  • 1/2 stick celery, diced
  • 1 sprig coriander
make it
1. Heat the oil in a saucepan and fry the shallots till fragrant.
2. Put in the diced chicken meat and fry over low heat.
3. Add water, chicken cube and vegetables.
4. Simmer gently until the vegetables are cooked.
5. Serve soup, garnished with coriander.
